Description

A comforting pasta dish featuring creamy cheese, tender leeks, and savory ground meat, perfect for family dinners or special occasions.

Ingredients

Scale
  • 300 g Pasta (e.g., Penne or Fusilli)
  • 400 g Ground Meat (beef or mixed)
  • 2 Leeks
  • 200 g Cream Cheese
  • 100 g Grated Cheese (e.g., Gouda or Emmental)
  • 1 Small Onion
  • 1 Garlic Clove
  • 200 ml Cream
  • Salt and Pepper
  • 1 tbsp Oil

Instructions

  1. Cook the Pasta: Start by boiling a large pot of salted water. Add your pasta and cook according to package instructions until al dente. Remember to reserve a cup of pasta water before draining!
  2. Prep the Aromatics: Finely chop the onion and garlic, then slice the leeks into thin rings.
  3. Sauté the Meat: In a large frying pan, heat the oil over medium heat. Add the ground meat, breaking it apart with a wooden spoon, and brown it until cooked through and crumbly.
  4. Add the Aromatics: Stir in the onion and garlic, cooking for about 2 minutes until fragrant and translucent.
  5. Incorporate the Leeks: Toss the sliced leeks into the mixture and sauté gently until they soften, which will take about 3-4 minutes.
  6. Creamy Sauce Time: Lower the heat and mix in the cream cheese and cream. Stir continuously until the mixture becomes a smooth, creamy sauce.
  7. Melt the Cheese: Add the grated cheese and stir until it melts completely into the sauce, creating that luscious texture.
  8. Combine the Pasta: Gently fold in the drained pasta and mix until well coated with the creamy sauce. If you’d like it a bit saucier, add reserved pasta water gradually.
  9. Serve Immediately: Dish up the pasta while hot, maybe with a sprinkle of additional grated cheese on top for an extra touch.

Notes

Make-ahead tips: This dish can be made a day in advance; just reheat gently on the stove and add a splash of cream to refresh the sauce.
