Description

A comforting and indulgent Cheese-Leek Pasta dish featuring a creamy sauce with savory minced meat and tender leeks, perfect for family dinners or gatherings.


Ingredients

  • 300 g Pasta (like Penne or Fusilli)
  • 400 g Minced Meat (beef or a mixture)
  • 2 Stalks Leek
  • 200 g Cream Cheese
  • 100 g Grated Cheese (like Gouda or Emmental)
  • 1 Small Onion
  • 1 Garlic Clove
  • 200 ml Cream
  • Salt, Pepper
  • 1 tbsp Oil

Instructions

  1. Cook the pasta in a large pot of salted water according to the package instructions until al dente. Reserve a cup of the pasta cooking water.
  2. Chop the onion and garlic, and slice the leeks into thin rings.
  3. Warm the oil in a skillet over medium heat, then add the minced meat. Sauté until browned, about 5-7 minutes.
  4. Add the chopped onion and garlic. Cook until golden brown and fragrant, about 2-3 minutes.
  5. Stir in the sliced leeks and cook until tender, about 4-5 minutes.
  6. Reduce the heat and mix in the cream cheese and cream until a smooth sauce forms.
  7. Mix in the grated cheese, allowing it to melt into the sauce.
  8. Season the sauce with salt and pepper to taste.
  9. Fold the cooked pasta into the sauce, adding reserved pasta water if needed for consistency.

Notes

Make-ahead by preparing the sauce in advance. Customize the dish with different cheeses or add vegetables like spinach or peas.
