- 400 g Pasta (Spaghetti or Penne)
- 2 ripe Avocados
- 2 Garlic cloves, minced
- Juice of 1 Lemon
- 3 tablespoons Olive oil
- 3–4 tablespoons Pasta water
- 40 g freshly grated Parmesan (or nutritional yeast for vegan option)
- Salt and Black Pepper to taste
- Fresh Basil leaves (optional)
- Chili flakes (optional)
Instructions
- Cook the pasta: In a large pot, bring generously salted water to a boil. Add the pasta and cook it al dente, stirring occasionally. Before draining, reserve about a cup of pasta water.
- Prepare the sauce: While the pasta cooks, halve the avocados and remove the pits. Scoop the flesh into a blender, adding minced garlic, lemon juice, olive oil, Parmesan, salt, and pepper.
- Blend to perfection: Pulse until smooth and creamy. If too thick, blend in reserved pasta water until desired consistency.
- Combine: Drain pasta and return it to the pot. Pour in the avocado sauce, mixing gently to coat evenly.
- Taste and adjust: Season with more salt, pepper, or lemon juice as needed. Garnish with basil leaves and chili flakes before serving.
