Description

A rich and creamy pasta dish made with ripe avocados, garlic, and lemon, delivering comfort and vibrant flavors.


Ingredients

  • 400 g Pasta (Spaghetti or Penne)
  • 2 ripe Avocados
  • 2 Garlic cloves, minced
  • Juice of 1 Lemon
  • 3 tablespoons Olive oil
  • 34 tablespoons Pasta water
  • 40 g freshly grated Parmesan (or nutritional yeast for vegan option)
  • Salt and Black Pepper to taste
  • Fresh Basil leaves (optional)
  • Chili flakes (optional)

Instructions

  1. Cook the pasta: In a large pot, bring generously salted water to a boil. Add the pasta and cook it al dente, stirring occasionally. Before draining, reserve about a cup of pasta water.
  2. Prepare the sauce: While the pasta cooks, halve the avocados and remove the pits. Scoop the flesh into a blender, adding minced garlic, lemon juice, olive oil, Parmesan, salt, and pepper.
  3. Blend to perfection: Pulse until smooth and creamy. If too thick, blend in reserved pasta water until desired consistency.
  4. Combine: Drain pasta and return it to the pot. Pour in the avocado sauce, mixing gently to coat evenly.
  5. Taste and adjust: Season with more salt, pepper, or lemon juice as needed. Garnish with basil leaves and chili flakes before serving.

Notes

Serve with garlic bread or a mixed green salad for a delightful meal.
