- 3–4 tablespoons reserved pasta water
- 40 g freshly grated Parmesan (or nutritional yeast for vegan option)
- Salt and black pepper to taste
- Fresh basil leaves (optional)
- Red chili flakes (optional)
Instructions
- Cook the pasta: Bring a large pot of salted water to a rolling boil and cook your pasta until al dente, following package instructions. Remember to reserve about a cup of that precious pasta water before draining.
- Prepare the sauce: While your pasta cooks, slice the avocados in half and scoop out the flesh into your blender. Add the peeled garlic cloves, lemon juice, olive oil, Parmesan, salt, and pepper. Blitz until the mixture achieves a smooth, creamy consistency; feel free to add reserved pasta water as needed to reach your desired texture.
- Combine pasta and sauce: Return the drained hot pasta to the pot over low heat, then pour in the luscious avocado sauce. Toss them together gently, ensuring every strand is generously coated in that beautiful green goodness.
- Taste and adjust: Don’t forget to taste! Adjust the seasoning with salt, pepper, or an extra squeeze of lemon if desired.
