Ingredients

- 300 g Pasta (Penne or Spaghetti)
- 200 g Feta cheese
- 1 Organic Lemon (zest and juice)
- 200 ml Heavy Cream
- 2 tbsp Olive Oil
- 2 Garlic Cloves
- Salt and Pepper, to taste
- Fresh Parsley or Basil, for garnish
Instructions
- Cook the Pasta: Fill a large pot with water, add salt, and bring to a boil. Add the pasta and cook until al dente according to package directions. Reserve about 100 ml of pasta water, then drain.
- Sauté the Garlic: In a large frying pan, heat the olive oil over medium heat. Add finely chopped garlic and sauté for about 30 seconds until fragrant.
- Create the Sauce: Pour in the heavy cream and bring to a gentle simmer. Gradually stir in crumbled feta, allowing it to melt into a creamy sauce. Add lemon zest and juice, season with salt and pepper. If the sauce is too thick, add reserved pasta water until desired consistency.
- Combine Everything: Toss drained pasta into the cream sauce until well coated. Add fresh herbs and mix before serving.
Notes
You can prepare the sauce in advance and store in the fridge. Reheat gently before combining with fresh pasta.
