Description

Ingredients

  • 200 g Feta
  • 1 Organic Lemon (Zest and Juice)
  • 200 ml Cream
  • 2 tbsp Olive Oil
  • 2 Garlic Cloves
  • Salt and Pepper
  • Fresh Parsley or Basil

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente, usually 1-2 minutes shy of the package directions. Before draining, reserve about a cup of the pasta cooking water for later.
  2. Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic, stirring frequently. Sauté for about 30 seconds until fragrant but not browned.
  3. Create the Creamy Base: Slowly pour in the cream, allowing it to heat through. Let it simmer gently for a few minutes until it thickens slightly. Stir in the crumbled feta, letting it melt and blend seamlessly into the sauce.
  4. Add the Zest and Juice: Mix in the lemon zest and juice, stirring to combine. Taste and season with salt and pepper.
  5. Combine Pasta and Sauce: Gently add the cooked pasta to the sauce in the skillet, tossing to coat every piece thoroughly. If the sauce feels too thick, add reserved pasta water to achieve desired consistency.
  6. Finish and Serve: Plate the creamy lemon feta pasta hot, garnishing with freshly chopped parsley or basil for a splash of color. Enjoy immediately!
