Heartwarming and flavorful stuffed bell peppers filled with savory ground meat, fluffy rice, and melted cheese, all prepared easily in an Instant Pot.
Ingredients

- 4 bell peppers (red, yellow, or green)
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1 can diced tomatoes
- 1 tablespoon Italian seasoning
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- Prepare the peppers by cutting off the tops and removing the seeds.
- Mix in a bowl the ground meat, rice, diced tomatoes, Italian seasoning, salt, and pepper.
- Stuff each pepper with the meat mixture tightly.
- Place the stuffed peppers upright in the Instant Pot.
- Add 1 cup of water around the peppers.
- Cook on high pressure for 10 minutes.
- Release the pressure naturally for 5 minutes, then quick release any remaining steam.
- Melt cheese on top of the peppers for a few minutes with the lid closed.
- Serve and enjoy your meal.
Notes
Make-ahead stuffing can be stored in the refrigerator. You can also bake in the oven if an Instant Pot is not available.
