Description

Heartwarming and flavorful stuffed bell peppers filled with savory ground meat, fluffy rice, and melted cheese, all prepared easily in an Instant Pot.


Ingredients

Scale
  • 4 bell peppers (red, yellow, or green)
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 tablespoon Italian seasoning
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Prepare the peppers by cutting off the tops and removing the seeds.
  2. Mix in a bowl the ground meat, rice, diced tomatoes, Italian seasoning, salt, and pepper.
  3. Stuff each pepper with the meat mixture tightly.
  4. Place the stuffed peppers upright in the Instant Pot.
  5. Add 1 cup of water around the peppers.
  6. Cook on high pressure for 10 minutes.
  7. Release the pressure naturally for 5 minutes, then quick release any remaining steam.
  8. Melt cheese on top of the peppers for a few minutes with the lid closed.
  9. Serve and enjoy your meal.

Notes

Make-ahead stuffing can be stored in the refrigerator. You can also bake in the oven if an Instant Pot is not available.
