A vibrant casserole combining roasted corn and tender chicken with zesty lime and chili for a Mexican street food experience.

Ingredients

Scale
  • 4 cups corn (fresh or frozen)
  • 1 cup cooked chicken, shredded
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup cotija cheese, crumbled
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla chips for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine corn, cooked chicken, mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, salt, and pepper in a large mixing bowl.
  3. Mix until well combined.
  4. Transfer the mixture into a greased baking dish.
  5. Bake in the preheated oven for 25-30 minutes or until heated through and bubbly.
