Description

A flavorful dish featuring succulent chicken breasts stuffed with black beans, cheese, and corn, topped with salsa for a festive culinary experience.


Ingredients

  • 2 chicken breasts
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 teaspoon taco seasoning
  • 1 cup salsa
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the black beans, corn, shredded cheese, and taco seasoning in a mixing bowl.
  3. Carefully cut a pocket in each chicken breast.
  4. Stuff each chicken breast with the bean and cheese mixture.
  5. Heat olive oil in a skillet over medium heat.
  6. Sear each chicken breast for 3-4 minutes on each side.
  7. Pour salsa over the chicken in the skillet.
  8. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  9. Let the chicken rest for a few minutes before serving.

Notes
