- 2 chicken breasts
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 teaspoon taco seasoning
- 1 cup salsa
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the black beans, corn, shredded cheese, and taco seasoning in a mixing bowl.
- Carefully cut a pocket in each chicken breast.
- Stuff each chicken breast with the bean and cheese mixture.
- Heat olive oil in a skillet over medium heat.
- Sear each chicken breast for 3-4 minutes on each side.
- Pour salsa over the chicken in the skillet.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Let the chicken rest for a few minutes before serving.
