Description

Ingredients

  • 300 g ground beef (or a vegan alternative)
  • 1 tablespoon oil (olive or sunflower)
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 150 g mushrooms, sliced
  • 2 tablespoons tomato paste
  • 400 ml crushed tomatoes
  • 250 ml cream (or a plant-based alternative)
  • 100 ml vegetable broth
  • 100 g melting cheese (or cream cheese)
  • Salt, pepper, paprika, oregano or Italian herbs

Instructions

  1. Heat the oil in a large pot over medium heat. Add the ground beef and diced onion, sautéing until the meat turns a rich golden brown and the onions become translucent.
  2. Stir in the diced bell pepper and sliced mushrooms, cooking for an additional 2-3 minutes until the vegetables soften.
  3. Add the tomato paste, letting it roast slightly to deepen its flavor. Season with salt, pepper, paprika, and oregano.
  4. Pour in the crushed tomatoes, cream, and vegetable broth, stirring well to combine.
  5. Introduce the melting cheese or cream cheese, stirring until fully incorporated.
  6. Allow the soup to simmer for 2-3 minutes, letting the flavors meld together.
  7. Serve hot, garnished with fresh herbs if desired.
