Description

A flavorful dish featuring juicy chicken, vibrant bell peppers, and sweet pineapple, all roasted together for a tropical taste experience.


Ingredients

  • 4 chicken thighs or breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup pineapple chunks (fresh or canned)
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine soy sauce, honey, sesame oil, and minced garlic in a mixing bowl to create a marinade.
  3. Place the chicken on a sheet pan and season with salt and pepper.
  4. Surround the chicken with sliced bell peppers and pineapple chunks.
  5. Drizzle the marinade over the chicken and vegetables.
  6. Roast in the oven for 25-30 minutes until the chicken is cooked through and golden brown.
  7. Serve over a bed of fluffy cooked rice.

Notes

Marinate chicken and chop vegetables ahead of time for easier preparation. Can substitute chicken with tofu for a vegan option.
