- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup pineapple chunks (fresh or canned)
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Combine soy sauce, honey, sesame oil, and minced garlic in a mixing bowl to create a marinade.
- Place the chicken on a sheet pan and season with salt and pepper.
- Surround the chicken with sliced bell peppers and pineapple chunks.
- Drizzle the marinade over the chicken and vegetables.
- Roast in the oven for 25-30 minutes until the chicken is cooked through and golden brown.
