- 1 lb shrimp, peeled and deveined
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup mayonnaise

- 1 tablespoon lemon juice
- 1 tablespoon olive oil

Instructions
- Cook the penne pasta: Bring a pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain well and set aside to cool.
- Sauté the shrimp: In a large skillet, heat olive oil over medium heat. Add the shrimp and cook until pink and opaque, taking about 2-3 minutes per side. Remove from heat and let cool.
- Combine the salad ingredients: In a large bowl, mix together the cooked pasta, shrimp, cherry tomatoes, cucumber, and red onion.
- Prepare the dressing: In a separate bowl, whisk together mayonnaise, Greek yogurt, lemon juice, salt, and pepper until smooth.
- Mix it all together: Pour the creamy dressing over the pasta and shrimp mixture. Gently toss until everything is thoroughly coated and beautifully combined.
- Garnish and serve: Top with fresh parsley and serve chilled or at room temperature for maximum flavor.
Notes
