Description

A warm and comforting vegan potato soup that combines the silky smoothness of potatoes with the fragrant aroma of sautéed onions and garlic.


Ingredients

Scale
  • 800 g starchy potatoes, peeled and diced
  • 1 carrot, chopped
  • 1 onion, diced
  • 1 garlic clove, minced
  • 1 liter vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Nutmeg (optional)
  • Fresh parsley (optional)

Instructions

  1. Peel and dice the potatoes.
  2. Prep the carrot by peeling and chopping it.
  3. Chop the onion and garlic.
  4. Heat the olive oil in a large pot over medium heat.
  5. Sauté the onions and garlic until translucent, about 3-4 minutes.
  6. Add the diced potatoes and carrots, stirring to coat.
  7. Pour in the vegetable broth, covering the vegetables.
  8. Simmer for about 20 minutes until vegetables are tender.
  9. Blend the soup until smooth using an immersion blender.
  10. Season with salt, pepper, and nutmeg to taste.

Notes

You can customize with additional vegetables or serve with crusty bread and salad.
