- 800 g starchy potatoes, peeled and diced
- 1 carrot, chopped
- 1 onion, diced
- 1 garlic clove, minced
- 1 liter vegetable broth
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Nutmeg (optional)
- Fresh parsley (optional)
Instructions
- Peel and dice the potatoes.
- Prep the carrot by peeling and chopping it.
- Chop the onion and garlic.
- Heat the olive oil in a large pot over medium heat.
- Sauté the onions and garlic until translucent, about 3-4 minutes.
- Add the diced potatoes and carrots, stirring to coat.
- Pour in the vegetable broth, covering the vegetables.
- Simmer for about 20 minutes until vegetables are tender.
- Blend the soup until smooth using an immersion blender.
- Season with salt, pepper, and nutmeg to taste.
