- 800 g Potatoes (starchy variety)
- 1 Carrot
- 1 Onion
- 1 Garlic Clove
- 1 Liter Vegetable Broth
- 2 Tablespoons Olive Oil
- Salt, to taste
- Pepper, to taste
- Nutmeg (optional)
- Fresh Parsley (optional)
Instructions
- Peel and dice the potatoes.
- Prepare the carrot by peeling and chopping it.
- Finely chop the onion and garlic.
- Heat olive oil in a large pot over medium heat.
- Sauté onions and garlic until tender and translucent.
- Add potatoes and carrots, sautéing for 3-4 minutes.
- Pour in the vegetable broth and bring to a gentle boil.
- Reduce heat and let simmer for about 20 minutes.
- Blend the soup until smooth using an immersion blender.
- Season with salt, pepper, and nutmeg as desired.
Notes
For added texture, reserve some diced potatoes and carrots to add back in after blending.
