Description

Ingredients

  • 300 g Spaghetti
  • 200 g Fresh Spinach
  • 200 g Cream Cheese
  • 1 Small Onion
  • 2 Garlic Cloves
  • 150 ml Vegetable Broth
  • 1 Tbsp Olive Oil
  • Salt and Pepper
  • 1 tsp Italian Herbs
  • 50 g Grated Cheese (Optional)

Instructions

  1. Start by bringing a large pot of lightly salted water to a boil. Add the spaghetti, cooking according to package instructions until al dente.
  2. While cooking, finely chop the onion and garlic.
  3. In a large skillet over medium heat, warm the olive oil. Add the chopped onions and garlic, sautéing for 2-3 minutes until glassy.
  4. Toss in the fresh spinach, stirring until it wilts.
  5. Next, incorporate the cream cheese and vegetable broth, stirring until you achieve a creamy sauce.
  6. Drain the al dente spaghetti, then add it to the sauce. Gently toss to coat.
  7. For an extra touch, sprinkle grated cheese over the top and allow it to melt before serving.
  8. Finally, serve and enjoy!

Notes

Make-ahead tips: Prepare the sauce in advance and store it in the fridge. Reheat with freshly cooked spaghetti.
