Description

A comforting casserole featuring tortellini, rich tomato sauce, and gooey mozzarella, perfect for family dinners or gatherings.


Ingredients

  • 500 g Tortellini (fresh or refrigerated)
  • 400 g Chopped Tomatoes (canned)
  • 200 g Cherry Tomatoes
  • 200 g Mozzarella
  • 100 ml Cream
  • 1 Small Onion
  • 2 Cloves Garlic
  • 1 Tablespoon Olive Oil
  • Salt
  • Pepper
  • 1 Teaspoon Italian Herbs
  • Fresh Basil (optional)

Instructions

  1. Preheat your oven to 180°C (356°F).
  2. Grease a casserole dish lightly with olive oil.
  3. Cook the tortellini as per package instructions for about 2-3 minutes. Drain and set aside.
  4. Finely chop the onion and garlic.
  5. Heat olive oil in a pan over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
  6. Add chopped tomatoes and cream, stirring until well incorporated. Season with salt, pepper, and Italian herbs.
  7. Halve the cherry tomatoes and fold them into the sauce.
  8. Spread the tortellini in the casserole dish.
  9. Pour the sauce over the tortellini.
  10. Slice the mozzarella and arrange it on top.
  11. Bake for 20-25 minutes until golden and bubbly.

Make-ahead tips: Assemble the casserole up to a day in advance and bake it right before serving.
