- 500 g Tortellini (fresh or refrigerated)
- 400 g Chopped Tomatoes (canned)
- 200 g Cherry Tomatoes
- 200 g Mozzarella
- 100 ml Cream
- 1 Small Onion
- 2 Cloves Garlic
- 1 Tablespoon Olive Oil
- Salt
- Pepper
- 1 Teaspoon Italian Herbs
- Fresh Basil (optional)
Instructions
- Preheat your oven to 180°C (356°F).
- Grease a casserole dish lightly with olive oil.
- Cook the tortellini as per package instructions for about 2-3 minutes. Drain and set aside.
- Finely chop the onion and garlic.
- Heat olive oil in a pan over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
- Add chopped tomatoes and cream, stirring until well incorporated. Season with salt, pepper, and Italian herbs.
- Halve the cherry tomatoes and fold them into the sauce.
- Spread the tortellini in the casserole dish.
- Pour the sauce over the tortellini.
- Slice the mozzarella and arrange it on top.
- Bake for 20-25 minutes until golden and bubbly.
