- 500 g Tortellini (fresh or refrigerated)
- 400 g canned chopped tomatoes
- 200 g cherry tomatoes
- 200 g mozzarella
- 100 ml cream
- 1 small onion
- 2 garlic cloves
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon Italian herbs
- Fresh basil (optional)
Instructions
- Preheat your oven to 180 °C (350 °F).
- Cook the tortellini in a large pot of salted boiling water, following package instructions. Drain and set aside.
- Finely chop the onion and garlic. In a deep skillet, heat the olive oil over medium heat. Add the onions first, cooking until they begin to soften, about 5 minutes. Then, add the garlic and sauté for an additional minute.
- Pour in the canned chopped tomatoes and cream, seasoning with salt, pepper, and the Italian herbs. Let the mixture simmer for about 10 minutes.
- Slice the cherry tomatoes in half and gently stir them into the sauce.
- Combine the drained tortellini with the tomato sauce in a casserole dish.
- Tear the mozzarella into pieces and scatter it over the casserole.
- Bake for 20-25 minutes, until the cheese is bubbling and golden brown.
Notes
For a crispy top, place the casserole under the broiler in the last few minutes of baking, watching closely to prevent burning. This casserole can be prepared ahead of time and refrigerated before baking.
