Description

A heartwarming Tortellini Casserole with succulent tortellini nestled in a creamy sauce, covered in gooey mozzarella cheese.


Ingredients

Scale
  • 500g fresh tortellini
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 400ml crushed tomatoes
  • 200ml cream or plant-based alternative
  • 150g mozzarella, grated or sliced
  • 1015 cherry tomatoes, halved
  • 1 teaspoon Italian herbs
  • Salt and pepper to taste
  • A pinch of sugar
  • Optional: pre-cooked zucchini, bell pepper, or broccoli

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Heat the olive oil in a skillet over medium heat.
  3. Add the chopped onion and minced garlic, sautéing until translucent.
  4. Combine the crushed tomatoes and cream with the sautéed onions and garlic. Season with Italian herbs, salt, pepper, and sugar.
  5. Layer uncooked tortellini in a large baking dish, then pour the sauce over them.
  6. Top with cherry tomatoes and sprinkle with mozzarella cheese.
  7. Bake for 20-25 minutes or until golden brown.
  8. Allow to cool briefly before serving.

Notes

Customize by adding vegetables or different cheeses. Can be prepared a day ahead and baked from the fridge.
