A heartwarming Tortellini Casserole with succulent tortellini nestled in a creamy sauce, covered in gooey mozzarella cheese.

- 500g fresh tortellini
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 400ml crushed tomatoes
- 200ml cream or plant-based alternative
- 150g mozzarella, grated or sliced
- 10–15 cherry tomatoes, halved
- 1 teaspoon Italian herbs
- Salt and pepper to taste
- A pinch of sugar
- Optional: pre-cooked zucchini, bell pepper, or broccoli
Instructions
- Preheat your oven to 200°C (400°F).
- Heat the olive oil in a skillet over medium heat.
- Add the chopped onion and minced garlic, sautéing until translucent.
- Combine the crushed tomatoes and cream with the sautéed onions and garlic. Season with Italian herbs, salt, pepper, and sugar.
- Layer uncooked tortellini in a large baking dish, then pour the sauce over them.
- Top with cherry tomatoes and sprinkle with mozzarella cheese.
- Bake for 20-25 minutes or until golden brown.
- Allow to cool briefly before serving.
Notes
Customize by adding vegetables or different cheeses. Can be prepared a day ahead and baked from the fridge.
