- 400 g chicken breast fillet
- 1 bell pepper (red or yellow)
- 1 zucchini
- 1 carrot
- 1 small broccoli
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- 1 tsp paprika
- ½ tsp curry (optional)
- Salt and pepper to taste
- 2 tbsp soy sauce
Instructions
- Prepare the chicken: Cut the chicken breast into bite-sized pieces and season it with salt, pepper, and paprika.
- Chop your veggies: Slice the bell pepper, zucchini, carrot, and broccoli into small pieces. Dice the onion and mince the garlic.
- Heat the skillet: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the seasoned chicken and cook until golden brown, then remove it and set aside.
- Sauté onions and garlic: In the same skillet, add the remaining tablespoon of olive oil, the diced onion, and minced garlic. Sauté for 2-3 minutes until fragrant.
- Cook vegetables: Add the chopped vegetables to the skillet. Stir regularly and cook until tender-crisp, about 5-8 minutes.
- Combine and season: Return the chicken to the skillet, drizzle in soy sauce and curry (if using), and heat through for another 2-3 minutes.
- Serve hot: Spoon the stir-fry onto plates and enjoy!
