Description

A vibrant stir-fry featuring tender chicken and a medley of colorful vegetables, this dish is a culinary celebration of flavors and health.


Ingredients

  • 400 g chicken breast fillet
  • 1 bell pepper (red or yellow)
  • 1 zucchini
  • 1 carrot
  • 1 small broccoli
  • 1 onion
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp curry (optional)
  • Salt and pepper to taste
  • 2 tbsp soy sauce

Instructions

  1. Prepare the chicken: Cut the chicken breast into bite-sized pieces and season it with salt, pepper, and paprika.
  2. Chop your veggies: Slice the bell pepper, zucchini, carrot, and broccoli into small pieces. Dice the onion and mince the garlic.
  3. Heat the skillet: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the seasoned chicken and cook until golden brown, then remove it and set aside.
  4. Sauté onions and garlic: In the same skillet, add the remaining tablespoon of olive oil, the diced onion, and minced garlic. Sauté for 2-3 minutes until fragrant.
  5. Cook vegetables: Add the chopped vegetables to the skillet. Stir regularly and cook until tender-crisp, about 5-8 minutes.
  6. Combine and season: Return the chicken to the skillet, drizzle in soy sauce and curry (if using), and heat through for another 2-3 minutes.
  7. Serve hot: Spoon the stir-fry onto plates and enjoy!
